About
The Villiera vineyards have been run by Simon Grier since 1983 (ably assisted by vineyard managers Christie Franse and Wayne Daniels) and are approximately 170 hectares in extent. Yields are a conservative 8 tons per hectare to ensure fruit quality. The varieties planted in the vineyards are 50% red and 50% white. The wines produced are 40% Cap Classique, 30% red and 30% white. At Villiera, productivity is of utmost importance. Our new pruning techniques taught to the pruning team by Italian company Simonit and Sirch has greatly improved productivity of the vineyard team and uniformity, longevity and quality of the vines.
Neethlingshof Estate has a long and rich tradition of wine making in Stellenbosch, the second oldest and most premier wine producing area of South Africa. The Estate occupies an incredibly privileged site with ideal natural conditions, soils, slopes, altitudes and climate to produce a variety of great wines. All the grapes for the Neethlingshof wines are grown on the estate and all the wine is made, matured and bottled in the cellars of the estate, adhering to strict vegan guidelines during the entire farming and winemaking process.
Our story dates back to 2001 when the first Hill&Dale wines were made and introduced to the market in 2003. It is the delicate balance between the team’s passion and sourcing the finest Stellenbosch grapes that allow our wines to be modern and unpretentious, yet classic and authentic. The Stellenbosch district is the second oldest in South Africa, after Constantia, and is responsible for around 14% of the country’s wine production. The area is surrounded by the Helderberg, Simonsberg and Stellenbosch Mountains and is exposed to climatic influences from nearby False Bay. The bay tempers the climate and keeps average temperatures during the summer growing season to around 20-25 degrees C.

- The sweet, dark-fruit, Shiraz characters dominate initially while herbaceous, red-fruit notes of the Cabernet Sauvignon are evident in the background.
- Intense, rich ruby colour.
- The wine is medium full-bodied with a smooth, velvety texture, fresh acid balance, and a sweet smokiness reminiscent of the Old Man’s pipe tobacco.
- A lingering and friendly aftertaste completes the experience and sets up the palate for the next sip.
- Easily enjoyed on its own, but will compliment, beautifully, braid lamb chops or pan-fried steaks with rosemary and truffle butter.
