1x Unoaked Chenin Blanc 2025
- Grapes were hand-harvested in the early morning at Cavalli over the two days.
- Grapes were whole-bunch pressed and settled over two days to achieve good clarity of juice.
- The juice was inoculated with two different yeasts.
- One aimed at achieving an expressive fruit profile while
- the other was used to impart a softer mouthfeel.
- The wines were fermented in stainless steel tanks with lees contact for only one month before bottling in April.
- This Chenin offers bright and lively aromas of white peach, lemon grass, and limes.
- The palate is fresh and zesty, showing passion fruit and winter melon.
- The vibrant acidity adds length, texture, and a crisp, refreshing finish to the wine.
- Alcohol by Volume: 13.35%
1x Shiraz 2023
- Grapes were hand-picked in the early morning atCavalli in two separate pickings.
- 58% of the grapes were crushed and fermented in a stainless steel tank with pumpovers multiple times daily.
- The remainder was fermented in small open-top vessels, each with a proportion of whole cluster
- Maturation took place initially in stainless steel for 6 months (with a very light addition of French oak staves
- Spicy notes of black pepper, cinnamon, and cloves are layered atop black cherry and chocolate.
- The palate is medium to full-bodied with a good balance of fruit and wood spice.
- Alcohol by Volume: 14.4%
1x Chardonnay 2024
- Fermentation was completed in barrel and the wine kept on its lees until bottling.
- The wine remained in 225L French oak barrels on its lees for 10 months before blending, of which 25% were first-fill barrels.
- Notes of lime, orange, and nectarine underpin a unique tropical hint of pineapple and mango.
- The oak is well integrated on the palate, showing as a delicate spice and vanilla, complemented by the tangier taste of lime on the palate.
- Some buttery brioche adds to the body and mid-palate of the wine, creating a multi-layered taste that is both complex and fresh and enjoyable
- Alcohol by Volume: 13%
1x Reserve White 2024
- This blend of 60% Chenin Blanc,30% Verdelho,6% Chardonnay, and 4 % Viognier was a small batch fermented in 27% first-fill French Oak barriques for 6 months.
- The Verdelho block is the 2nd oldest block in SA.
- This wine shows complex and enticing aromas of white peach, apple, pear, and lime with layers of almond brittle, orange zest, and brioche.
- The palate is broad and textured but boasts a fresh, mouth-watering acidity and a crisp, dry finish.
- Alcohol by Volume: 13.2%
1x Cabernet Sauvignon 2021
- Awards: Gilbert & Gaillard Double Gold, John Platter 4.5 star – 2024
- Michael Fridjhon: “Maroon-edged, deep vermilion. Cassis and bruised raspberry aromas, savoury and fresh. On the palate, the tannins are evident but not intrusive and add an element of freshness to the mid-palate and the finish.”
- Maturation took place in 225L French oak barriques for 24 months (approximately 30% first fill).
- Medium-bodied with Aromas of blackberry, dark chocolate, and coffee.
- Layers of vanilla and cigar box complement a richly structured palate with a plush, lingering finish.
- Alcohol by Volume: 14%
1x Warlord 2021
- Award: 95 Points, Tim Atkin
- Previous awards: Double Gold National Wine Challenge, Double Gold Michelangelo, Gilbert & Gaillard Double Gold, 91 Points Tim Atkin, 4.5 Star John Platter.
- A blend of Cabernet, Malbec and Petit Verdot, all grown on the Estate.
- The Cabernet Sauvignon was fermented in stainless steel with 3-4 pumpovers daily. The Malbec and Petit Verdot were fermented in small open-top vessels with manual punchdowns 3-5 times daily
- Maturation took place in 225L French oak barriques for 22 months (approximately 35% first fill)
- Notes of fresh plum, blackforest cake and cedar spice.
- The wine shows a delicate mid-palate with a soft, rounded tannin that complements a well-balanced acidity.
- Pairs well with red meat dishes and hearty stews
- Varietals: 63% Cabernet Sauvignon, 21% Malbec & 16% Petit Verdot
