Before he built his "City of 7 Churches" in the valley of Glendalough, St Kevin spent 7 years in the wilderness. This whiskey is made the hard way, in the traditional style, its character too, shaped by 7 years. On the bottle, you'll see 7 silver crosses - these will lead you to the 7 churches in Glendalough.

This single malt whiskey is made using a mash bill of locally grown, locally malted barley with no smoke or peat in the malting process. Copper Pot Still. Double Distilled. Non- Chill-Filtered. These heavier double distilled whiskeys keep more of the base malt characteristics from the mash bill. They are aged in first- fill ex- Bourbon casks to compliment the malt characteristics perfectly. A whiskey aged cask by cask.

Tasting Notes
  • Nose: Rich and sweet, with a touch of cinnamon and more than a hint of citrus fruits - orange zest and lemon infused with vanilla ice cream and wild flowers.
  • Palate: A silky smooth palate with returning orange zest to the fore, rich creme brûlée and dark chocolate notes and a touch of cinnamon and white pepper spiciness, followed by the robust malt and oak influenced flavours.
  • Finish: Luxurious and lingering, the spicy, sweet notes elegantly marry on the long finish.
  • Non- Chill-Filtered. Natural Colour.
