Sourced from some of the finest vineyards of Stellenbosch. The grapes were harvested from +- 23 year old vines. 30% were dryland bush vines. 70% were from a 4 wire vertical trellis system and received supplementary irrigation.The grapes were hand picked and delivered to the cellar where destemming and partial crushing occurred. After partial fermentation and a gentle pressing, the primary fermentation and MLF were completed in the tank. The wine was then racked to used barrels and matured for 6 months. Fermentations were natural.
