About

With over 25 years of winemaking experience gained in South Africa and a number of wineries around the world, including Chateau Margaux in France and Peter Lehmann Wines in Australia, David Finlayson is a name synonymous with producing wines from top-quality Burgundian and Bordeaux grape varieties alike.

Born and raised in Stellenbosch and a third-generation grape grower and vintner, David Finlayson and his family purchased the run-down Edgebaston Farm in 2004 and began the painstaking replanting and rebuilding process to create the picturesque 30-hectare vineyard that is the Edgbaston Vineyard today.

• The wine shows an elegant minerality with lime-citrus, sourdough and cinnamon flavours.
• Ideally seafood dishes like Seabass or Lobster or light meats such as Quail or Veal
• A vegan option such as grilled cashew, peanut and soy sauce topped with fry vegetables would also be a fantastic option

• Pairs well with Calve’s liver & creamy onions, or venison with redcurrant jelly, or roast baby beef with anchovies & crispy potatoes.

• Grapes were left to dry or develop noble rot every year on the vines that looked best suited to the required ripening
• Hand-harvested, crushed and left to soak on skins for 24 hours
• Pressed in a basket press
• Fermented in old French oak and blended over 5 years in a solera styled system before racking, fining and filtration
• Alcohol by Volume: 12.75%

• This fortified wine will be ideal with deserts, cheeses and preserved fruit to round off a meal or enjoyed on its own by a warm fireside or during a night safari listening to the sounds of the African bush and wildlife
