Chablis is in the northern part of Burgundy, halfway between Dijon and Paris. The continental climate (very cold in winter and hot in the summer with frosts in spring) and the marly limestone soils combine to mould the unique character of Chablis wines. About 3 500 hectares are planted (including 856 ha of Premiers and Grands crus) with Chardonnay.
Maison Louis Jadot, founded in 1859 by Louis Henry Denis Jadot, is among the premier wine houses in Burgundy’s Côte d’Or. Jadot’s current winemaker, Frédéric Barnier, and his team balance tradition with technology by focusing on the purest expression of each wine’s territory. This allows the vinification to take the lightest possible hand in winemaking and produce the essence of fine Burgundy. The house boasts 528 acres of vineyards.
