Paul and Nicky Wallace purchased their 25-hectare farm in September 2003 and immediately set out to create their own little piece of heaven. Paul is a viticultural consultant and here, at last, he could practise what he has advised and encouraged other farmers to do in their vineyards. It has long been Paul's belief that the cool-climate region of Elgin, previously best known for its apples and pears, is one of the most exciting developing wine regions within the South African wine industry and indeed internationally.

Winemaking and Tasting Notes: The 2017 Paul Wallace Brave Heart Pinot Noir is our fifth vintage. The name is a tribute to William Wallace, a man of great principle and heart, who we would like to believe is one of our ancestors. It is also a play on the Pinot Noir cultivar’s nickname – the Heart Break grape. Fortunately, our 2017 Pinot Noir offering has once again captured our hearts and is anything but a disappointment. Production was very limited - only 10 barrels / 2106 litres of this vintage were vinified. Pristine grapes (Clone PN115, Guyot pruned) selected from three different slopes on our farm Wallovale Vineyards, were vinified with much love and gentle attention at the Almenkerk Wine Estate.

The wine was bottled on 30th January 2018. The Brave Heart Pinot Noir proudly introduces itself with a bright ruby red colour enticing you to explore it further. Fresh primary fruits, wafts of sour red cherries, strawberries and mulberries on the nose follow through onto a fruit-driven palate. The purity of fruit is embellished by subtle oaking (20% new wood, 45% second fill, 35% third and fourth fill) and spicy undertones typical of the Elgin region. The new barrels were sourced from the Francois Frere and Mercurey cooperages in Burgundy, France.

Serve the Brave Heart with plum-glazed duck, roast turkey or a beautiful side of salmon. It is recommended that in our hot summer months you serve this wine ever so slightly chilled. Awards: • Released January 2019 • Results from Decanter 2019 and Old Mutual Trophy Wine Show 2019 pending.

Here at OneDayOnly we pride ourselves on two things:

Our remarkable ability to remember quotes from practically any movie, and our skill in catering to almost any person in South Africa.

The latter is the harder of the two, because A) we haven't met everyone in the R of SA and 2) our personal tastes can hardly be used as a benchmark for things other people may enjoy.

Still, through sheer determination and never-miss-an-episode viewings of Egoli and Generations, we like to think we hit the proverbial nail on the head more often than not.

And in the almost unfathomable event that we're completely wrong and nothing on our cyber-shelves appeals to you, we'd like to leave you with the following gem from Lord of the Rings:

"Use the force, Harry." - Edward Cullen.
