About the wine

Poise, elegance and individuality are hallmarks of our limited vintage Cap Classique. Made only from Pinot Noir this vintage MCC displays an attractive “partridge eye”
colour with fine persistent mouse. Two years sur lees have resulted in the rich yet mellow autolytic flavours adding complexity to finely tuned red fruit, the broad palate is
freshened by well-integrated acidity leading the long and textured finish.

Viticulture

  • Soils: Ancient decomposed granite loam with iron-stone inclusion.
  • Aspect & Elevation: North / North East from 180-270m above sea level at 8km from the Atlantic Ocean
  • Trellis & Plant Density: 1 .8m - 5 strand fence; Guyott Pruning at 4000 vines/Ha;
  • Harvest dates: 2nd February 2015, hand-harvested into crates.

Winemaking

  • Cellar door: All grapes hand sorted, cooled, de-stemmed whole berry to press with 6hrs skin contact.
  • Fermentation: Cold in steel fermenter using a selected yeast strain, racked after 6 months fine lees contact & 100% malolactic fermentation.
  • Maturation: 2 years sur lees and zero dosage at disgorgement.
