Classic Extra Virgin Olive Oil

Superior category olive oil obtained directly from olives and solely by mechanical means. Produced from different olive varieties grown on the estate and cold processed in the farm oil mill within 12 hours of picking. Produced in Italy from Italian olives. Made from selected olive varieties from the estate: Frantoio, Peranzana, Coratina, Cima di Melfi, Nociara, Fs17, Nocellara, Maiatica, Kalamata and other experimental varieties, thus creating a harmonious blend in which the bitter and the piquant tones are perfectly balanced in a rich though smooth medium-fruity extra virgin olive oil.    

Modena Balsamic Vinegar

Obtained from the must of typical grapes of the Modenese acetificate and aged in old barrels of wood. Of dark brown colour, has a distinctive and persistent odour. The taste is sweet and sour and balanced. It suggested dressing for salads and for marinating raw fish, meat carpaccio. In cooking venison, to marinate the lamb and grilled meat and fish.

Variant 1 - Granverde
Selected estate olives are milled together with the rind of organic lemons to recreate a time-honoured Colonna family recipe.
Ideal to marinate shellfish, raw and smoked white fish as well as to dress cold meats. Perfect for dips and sauces and on steamed vegetables. Great on pasta as well as in cooking white meat and baked fish.


Variant 2 - Arancio
The delicate flavour of Sicilian oranges pervades this olive oil, created in the estate’s own mill by simultaneously crushing freshly picked olives and oranges. Golden yellow with a warm perfume of orange, this oil is ideal for marinating raw fish, as a dressing for exotic salads, grilled fish and summer pasta dishes as well as in the preparation of game and other strong flavoured meats and naturally in biscuits and cakes.

Variant 3 - Ginger
Fine, fresh root ginger from the Far East is milled with our own olives. This unusual union creates a remarkable spicy flavoured oil.
This oil is excellent for all Asian cookery, curries and rice dishes, as well as for lentil soups and to dress steamed vegetables, smoked meats and fish and it is just perfect with roast pork.

Variant 4 - Mustard
Extra virgin olive oil and essential oil of mustard.
Ideal for the preparation of steak and other meat dishes and as an ingredient in vinaigrette sauces and dips.
