• Vineyard region: From a selected block of Chenin Blanc, situated on the Western slope of the estate, nestled in the foothills of the Simonsberg Mountain.
• Harvest date: February 2014
• Yeast: Selected strains of Saccharomyces Cerevisiae (NT 166/Vin13)
• Fermentation: 14 to 20 days at 14°C
• Maceration: None
• Malolactic fermentation: None
• Maturation: Tank battonage
• Fining: Bentonite and Isinglass
• Vintage: Earliest harvest in 50 years lead to abnormal harvest dates, but still beautiful ripe matured grapes were harvested with good natural acidity.
